Paula's Low Sugar/No Sugar Fruit Muffins
Makes about 1 dozen.
Preheat oven to 350°
Dry Ingredients:
3 cups flour (I use half almond flour and half regular baking flour)
3 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon salt
3 - 6 tablespoons brown sugar—(optional) there is a lot of natural sugar from the bananas, apples, dates and blueberries, but they are definitely tastier with a bit of sugar.
Wet Ingredients:
3-5 old or frozen bananas
1 cup chopped dates
1 cup of fresh or frozen blueberries (optional)
1/2 cup apples (optional)
1 cup chopped nuts (walnuts preferable)
2 eggs
4 tablespoons oil (I use our CBD olive oil, you can use any oil such as coconut oil or avocado oil)
2 teaspoons vanilla extract
1 tablespoon maple syrup or honey (optional)
1 - 2 cups almond milk, oat milk or regular milk (start with a cup and if the batter seems really thick add another cup)
Spray muffin tin with cooking spray, Mix dry ingredients together in a bowl, mix wet ingredients in another bowl. Combine all ingredients together. Sometimes batter is too thick, I add more milk to make it thinner.
Bake at 350° for 20 - 25 minutes. Do the toothpick test to make sure muffins are not sticking.
